Pancakes

Sundays smell like pancakes. This is an easy, healthy and gluten-free recipe for you who loves to enjoy Sunday in Slow Mode.

Ingredients:
1 ripe banana
1 tablespoon tapioca flour
1 tablespoon of gluten-free oats
1 egg (or as a grandpa`s substitute: 1 tablespoon of chia or linseed sprouted in 3 tablespoons of water for 30 min)

honey or coconut sugar
fruits for topping

Preparation:
Mix the egg and add the banana. Then add the tapioca flour and the oats. Mix well until smooth.
In an anti-adherent pan the medium temperature, with coconut oil, pour the dough (about two tablespoons per pancake).

On top, we suggest honey and berries for topping.

Tip: You can prepare and mantain it frozen.
